We just got our first Community Supported Agriculture (CSA) Food Box last Thursday from Live Earth Farm, Watsonville. This farm has many pick-up locations throughout Santa Cruz County and Santa Clara County. The box consists of 100% organic fruits and veggies that are no more than 24 hours old!

If you don’t like beets, trust me, you’ll actually love these. This is a gateway beet recipe!
Best-Ever Roasted Beets & Dipping Sauce Recipe ->
- 4 medium-sized Beets
Preheat oven to 350F. Wash the beets. Wrap the beets in foil and roast in the oven for approximately 1 hour (this depends on the size of the beets).
Remove the beets from the oven when roasted. Rub the skins off of the beats and cut the beets into bite-size pieces (not too small).
- 1 Part Horseradish
- 3-4 Parts Sour Cream
- Salt & Pepper
Mix these ingredients together in a small bowel. Arrange the roasted beets on a plate and drizzle the sauce over top!
